Salad mix and small braising greens size I cut with the serrated victorinox.  Bunching sizes I pluck, mainly to not have a knife along with rubber bands and stems/leaves in the hands.

I'd be curious to know how many folks cut leaves off, versus plucking them off, for cut-and-come-again type greens.  I know that's a little OT for the original question, but I've heard a lot of different theories about what is "best", both for plant recovery and harvest shelf-life.  Opinions?
