Sandie Shores, in "Growing and Selling Fresh Cut Herbs," says:
"To effectively delay flowering, cut the main stem and large side branches
(just above a branch) deeper into the plant, but no more than 1/3 of the
plant at one time. This pruning will cause the basil to grow several more
sets of leaves before it will try to flower again."
I've been pretty severe with mature basil plants, and they just keep coming
back.
