I use them and use sunshine organic potting mix. sometimes I'll add a bit of kelp or worm castings to the mix but not always. I did find a second soil block maker in a thrift store for 8 bucks and welded two together, that works great.

1 40 pound bag of mix (I think thats how big they are) makes 450 2" blocks. I use standard plastic trays to hold em and each tray can hold 50 blocks.
Some of my trays have holes in the bottom some don't I think I like the ones with out the holes, then I don't have to water as much.

I know a guy who transplants them with a hatfield, maybe he'll chime in......

When I first started out with this market garden thing, I used the 2" soil blocker. I can't remember the mix I used, but close to what Coleman suggests. I did that for years. As the farm grew and I needed to find ways to save time I started using Redi Earth to make the blocks. That worked fine. We do thousands of transplants a year now and I can't keep up with making soil blocks.I never had the floor model and maybe that would have made a difference.
You do need some way to carry the blocks to the field. I loved using the blocks, but I honestly can't remember if I truly got a better transplant or not. We're back to using speedling trays now. I bought cases of plug trays a few years ago, but they just don't last and then I'm left with dealing with all that plastic. At least with the speedlings I can reuse them for many years.
