Richard, in my cynical manner I meant "in the country legally" which has  a way of affecting compensation.
Work is work and when I work someone I am taking a risk they won't meet my expectations. I still pay what I initially said I would pay and if they are lame they don't get a second bite of my apple.  It is my gain having help and I just can't imagine offering someone pennies in this day. I have been lucky in that I seldom work someone new. I guess I'm a sucker but my help goes home with food at no cost to them.
Invariably there is almost always more food in the field than I can sell and so................I eat and sleep well.

What do the tax man, the insurance man, and the workers comp man have to say?
 
If they are under your direction and recieve compensation they are employees; are they not?
