I've always planted our potatoes by hand in 2 rows in raised beds
(except last year, which is a different story...). I feel that I need
to get more spuds into less space this year. I'm thinking of rows on
2 ft centers.

Might be okay for first earlies which are burried deep at planting and not hilled, for a late full crop I would think you would be short on dirt to hill with at 2 foot rows.

How do you do yours?

These days with a few hundred pounds of seed, I use a hand hoe, a rake, and a troy-Bilt. Where we did 400 acres planting was by machine, and all cultivation and hilling was with 4 (3 foot) row front mounted cultivators.
