Clean garlic, and remove the roots.
Finely chop garlic and stems (up to the brown parts).
Place chopped garlic and chopped stems in a pyrex dish with a mixture of 50%
butter and 50% olive oil (or just the butter if you prefer), plus some salt.
Microwave this mixture until it boils. Pour some over popcorn. (Popcorn
provides lots of fiber, and so do the cooked green stems.) Put the remainder
in
the refrigerator and use as needed. (It won't last long!)

If the green garlic has already made "garlic chives", these have a good strong
garlic flavor, and are considered a delicacy by our oriental customers. These
are found up near the top third of the garlic plant.

Some people say they clean and fry the roots. (I haven't tried to do that,
yet.)

Another neat thing about green garlic is you don't have to mess with the
paper-like covering on the individual cloves, mainly because they haven't
formed yet. Last week, we had many large green garlic, so we sliced off the
bottom portion of one to show how the individual cloves were starting to
form.
Once you sell someone the green garlic, they will return every week for more!
