Nancy, I don't use it yet but I will soon. The product is actually a
food itself, not just food grade. I think the wholesaler who ships to
McDonalds in northern Texas uses it to keep lettuce fresh. One of the people
there told me that it kept a head of lettuce green and crisp even when they left
it out in the parking lot last June for a couple of hours as a test.
I am sorry that they don't discuss this on their web page. It is not
the primary use of the product.
