I have only grown then for 2 years and are still experimenting with them.
But I learned this year that they are better green...but still taste good
when yellow. They seem to be sweeter when they are more ripe, the yellow
stage. And I had a lot of them so I put some in my chicken soup that I make
and they are wonderful in there!
