I CAN see your point. Other points:
1) Farmers, especially small ones, are horribly under compensated in
this country. This guy is trying to get compensation he feels
appropriate. I don't begrudge him that.
2) He includes postage. I first offered $6 pints of blackberry jelly
shipped for $10. Then, I found postage was between $5 and $9. I
imagine his garlic costs $1-$2 for postage and that much again to
package. I doubt that the sale of a single pod/bunch of garlic is
profitable to him.

That said, I don't think I will be buying from him; I don't see how I
can grow a profitable crop from his seed. His target market is
probably seed collectors and not growers.
