-- Pickled garlic scapes:

3 cups vinegar (I have used rice and organic apple cider, not mixed though)
5 cups water
1/4 cup kosher salt
1 tbl good curry powder for each quart you fill
At least 1 pound of scapes, whole, long and wiggly

Boil the water, vinegar salt solution. When it boils pack hot jars with
whole scapes and than put the curry powder in and than the brine. Put on
lids and Place in a hot water canner and boil for 45 minutes. Let the
jars sit for at least 2 weeks before serving to get best flavor. If you
don't like curry omit. Fresh herbs like dill would also be good I would think.
