I have a similar recipe that I got out of Stocking Up III by Carol Hupping.
It
is called Penag Pickled Garlic. I put some up from last year and enjoyed it
so
much in stir frys or any other Asian type of recipe. It is especially good
minced and sautéed w/ carrots, ginger and some soy sauce and a touch of honey.

Penag Pickled Garlic

4 oz. fresh garlic (about 1 cup)
1 1/2 cups rice vinegar
2 Tblsp. Rodale's Whole Pickling Spice (see below)

Peel garlic and blanch for 30 secs. Drain. Combine vinegar and pickling
spice
and bring to a boil. Pack garlic in 2 hot half pint jars. Pour hot liquid
over
garlic leaving 1/2 head space. Seal and process for 10 minutes in boiling
water
bath.

Rodale's Whole Pickling Spice

2 T. bay leaves-crushed
1 T. cardamom seeds
1 T. dried ginger root
1 stick cinnamon-broken into smaller pieces
1 1/2 whole dried chili peppers-can be broken or crushed
2 T mustard seeds
1 T. whole allspice
1 T. coriander
1 T. peppercorns
