I disagree too. We ought to be growing for customers and selling when it is
most convenient for as many people to come and buy as possible. This idea
that the customer comes second is the kind of thinking that has offered the
customer GMO's and tasteless tomatoes varieties that ship well and last 2
weeks on the shelf.

I understood the post to be saying that the "special" event impression was
one that would draw customers to the market and "get there early" for the
best selection.
Personally, I think the fact that the farmers' market occurs once or twice a
week makes it special enough. If the farmers' market were held all day
Saturday it would still be special. I still don't see any reason for 7AM.
8 or 9 might be better for the customers and for us. If we did an 8 - 5
market on Saturday AND I went home with nothing in the truck because it was
possible for more customer's to attend, then I would find customer
convenience a very worthwhile objective.
The further clarification in their post:

The other idea in the post creates the idea of scarcity which, by the way,
is one of the oldest selling techniques in the book. So does, "get it while
it's early". Does this sound anything like "limited quantities available"
or "shop early for the best selection" or "for a limited time only"? Not
that I'm above using persuasive sales techniques to sell my stuff over
someone elses.
However, it is true that the earlier we can get it to market the fresher it
is.
I just think that there are a lot of customers who never get to our weekly
special event because the hours are inconvenient.
