National Public Radio had a short item from The Splendid Table about a week
ago on how to prepare leafy vegetables for storage. According to the
reporter a lettuce leaf could be stored in perfect condition for weeks.
They wash the leaf in cool water and then soak it in cool clean water to
allow the cells to absorb the most water that they can.
They then gently dry the leaf exterior on a paper towel or such.
The leaf is then stored in a cool place with no air flow to cause excessive
drying.
I imagine that their web page still has the information. While this was
intended for home use it seems as though it might have some application on
the commercial scale.
