Regarding good varieties of sunflowers for cut flowers, I've been most impressed with Valentine and Sonja in terms how many actual harvestable stems they produce and because as a floral designer droopy heads frustrate me. For someone just starting out variety trials might be a good idea, to see what grows in your area, and I would recommend making sure the varities tried are pollenless. Both of these varieties are available from Johnny's.
