That's another thing that you might not think of: In Central Texas there are a lot of small butcher shops - because of all the wealthy DEER HUNTERS (lots of lawyers and state legislators in there).  Then they can butcher other animals the rest of the year.

A great idea, co-op butchering, and obviously cost efficient. The big snag
with butchering for sale is USDA. We learned there's a USDA certified
butcher only seven miles from us, and it happens to be the only one in the
state. I recall as a kid we had one steer butchered each year in town where
they had a frozen locker onsite. When they went into town once a month for
the main grocery shopping they'd stop at the locker for our beef.
Registered hereford at that. As for the milch cow, I don't even want to
remember that.
