If you like, here is how we do things here, with a modification of the
stuffing (Dressing) used for Goose in my part of Norway.

In a large pan, fry 1 lb of smoked bacon, cut into small pieces, until
browned, remover with a slotted spoon. Now fry 1 lb of sausage meat in the
bacon fat until browned. Again remove with a slotted spoon.

Fry 3 lbs of chopped onion and 5 cloves of chopped garlic in the pan fat.
When soft, add 3 tablespoons of ground sage, 1 table spoon of ground Thyme
and 1 table spoon of beef stock powder. Stir well. Add back the bacon and
the sausage meat(with all the drippings from them, and now add a 2 lb loaf
of French Bread broken into small chunks.

Stir around until mixed and the bread has absorbed all the liquid.

Press into a casserole dish or into the Turkey as stuffing. (I do both, the
turkey stuffing is considered the best by the family members). Bake the
dished stuffing at 350 until cooked,

The dished version is also good cold as a "meat loaf" sandwich meat.
