Our farm was in mid-Wisconsin, Marquette County. The large, stone
walled/dirt-floored basement was used as you describe you mom's, shelves
burdened with jars of canned food, including meat before we had a freezer. The
potatoes were piled in one corner and the carrots piled nearby. Very cool down
there in spite of the wood-burning gravity furnace off to the side.

Anyone building a new house or adding a new room would do well to build a
dirt-floor basement below.

ah, ok.
 
I was wondering, because there are a lot of "critters" in the desert that
burrow underground and would love a bunch of free meals without having to
surface.  A number of them are quite small in size.

Solid plastic would inhibit moisture movement. Those plastic food
boxes with lots of openings should work.

In all home food production enterprises, it is prudent to expect
losses and plan accordingly.

That said, perhaps an outer impenetrable surface, say a plastic
garbage can, with inner dirt and straw surrounding the veggies. Good
experiment.
