Almond extract is made from bitter almonds which contain cyanide. There is
hydrogren cyanide in lots of organic things like almonds, peach pits, etc.
The almond smell is actually created by the cyanide in the almonds and thus
not a mystery as to why cyanide smells like bitter almond.
