Now that you've brought this up...a reader asked me how she could grow beets that had smooth "bulb" tops instead of the corky appearance that most home-grown beets have. I thought the difference lay in variety, but is it?
It's very interesting to know that you worked with David Burpee. It would be fun to hear about your experiences in the company and what David was like.
The reason I asked about sugar beets is that we used to live next to a sugar beet seed company and we often had volunteer seedlings come up in our field. We tried eating them and found them quite good when they were still the size of ordinary beets. Perhaps that was the key, in using them before they got woody.

Detroit Dark Red, an oldie, is still about the best beet on the market, despite all the sexy names that have come along. It's a reliable grower, performs well in almost all climates, and has excellent taste. Usually has excellent germination, but old seed is sometimes hard to germinate.
