Sounds like a preference setting somewhere.

I know in Logic, the same thing happens to me if I haven't specified a
longer maximum time to record.

Check under the 'edit' menu, and look for 'preferences.'

I've never used Cool Edit, so that's the best advice I can give you. Also,
this is a stupid question, but do you have enough hard drive space
available? Have you tried defragging?

It is a good idea to run the application off one hard drive, and have
another hard drive as the location that you are recording to. That may help
as well.
