For what it's worth...

I never boiled my infused vinegars. I sterilized the bottles and caps.
When I filled the cooled and dry bottles, I had the caps in a hot water
bath. I took them out of the bath, screwed them on and let the cooling
action tighten the metal caps.

OK, and I'll admit it here, my vinegar bottles came, mostly from two
sources. All of my cilantro-chile-garlic vinegar was bottled in those SOBE
bottles with the lizard and I reused their metal caps... which I painted
after bottling. The rest were bottled in those little one serving wine
bottles that are sold in 4 packs.

Amazing how much wine I had to drink that year to get those bottles. Cases
and cases. Maybe that is why I was a happy market farmer in those days?
