The problem with mushrooms...

What most people associate with mushrooms, I think, are those rubbery canned
ones that we used to pick off pizzas... yuk! No wonder people think they
don't like them.

It also goes back to the lack of cooking practices in the general American
diet. To me, mushrooms don't just belong on pizzas. They belong in stews
and soups, cooked vegetables, salads and breads, added to dressings and
stuffed in breads. Lightly sautéed to top a burger or steak... sliced and
marinated in balsamic vinegar and roasted for a mushroom sandwich. Omelets
require mushrooms!

People don't buy mushrooms if they don't really cook.

As we go into the biggest cooking holiday of the year... I think of the
'feasts' I've endured. Those disgusting green beans with Campbell's
mushroom soup and canned fried onions on top. Sweet potatoes smothered in
marshmallows. As if a sweet potato is actually improved that way. Instant
mashed potatoes with canned gravy. Stove top dressing and a Butterball
turkey. Biscuits out of a can.

It's those kinds of 'cooking' practices that make selling any vegetable more
difficult.

The questions about lycopene in tomatoes. That makes me smile... How did
you answer that one with a straight face?
