I lived in Guatemala for 9 years and think ASECSA in Chimaltenango would be a
good group for you to network with.
Very well established mayan org. Also...there is some permaculture efforts
in SanLucan Toliman where the Mayan effort to reclaim land has been supported
by Catholic church there.

Here are two other resources in Guatemala-
AIDG: (http://www.aidg.org/)- they do lots of work in Guat with biogas and
other
types of alternative energy. i think they are located near Quetzaltenango-
so
more of a highland site.
El Pilar: (http://www.marc.ucsb.edu/elpilar/index.php) is an ancient mayan
site
that has been uncovered as an ancient forest garden. They are in the north
on
the border with Belize.
