Use the leaf in a salt-free diet as they are rich in mineral salts. A
poultice soothes inflammation and bruises. Add the young leaf to cold drinks
for their cucumber flavor and cooling effect. Chop finely in salads, yogurt,
soft cheese, pickles and sandwiches. Cook as spinach or with spinach. Add
to ravioli stuffing.
