Would it be too subversive to suggest humanure as the missing ingredient? 
Rats?  What's wrong with composting them too?

My recommendation is to get a copy of the Humanure Handbook from Joe:

The mold is not a problem at all.  It makes soil too.  Just don't let rats
get in.

I pul moldy food in my compost all the time.
Maybe mix it up a bit and add more "brown and dry"
if it is getting smelly.
