Scott,
The approach you suggest will work JUST FINE unless you are in a droughty region which Maine generally isn't. I've occasionally sowed all three at once. The buckwheat grows much faster while the others sprout beneath. Then scythe or just let the buckwheat make seed and fall over. Early sowings of buckwheat can often make enough seed to regerminate in the same season.
