A stiff and short bladed kitchen knife works fine for much of grafting. It
doesn't have the problem of being so sharp as box cutters so not so much
chance of cutting yourself badly.

Same here, Scott.
I'd never tried a box cutter, but the local Extension horticulture agent
asked me to lead a grafting class, and I told him, based on recommendations
I'd seen, that he could just buy some boxcutters at the local big box store
for the 'Master Gardeners' class. Never again. Even on soft stuff, like
apple/pear , I couldn't make a straight, flat cut - forget about the
beginners being able to come close to getting pieces that would come
anywhere close to fitting together with any hopes of a successful 'take'.
Maybe they work OK for some folks - but I'll stick to my grafting knife.

I am impressed with anyone that can get good results with a box cutter. I
tried and could not make a straight cut. The grafting knife has a beveled
edge, completely flat on the side down, which makes it easy to make straight
cuts.
Cost-wise its about the same, the cheaper Victorinox knives are $10-$15 and
you don't have to buy replacement blades.
