I agree with Little John 100%.

Grafting knifes are expensive, they need be sharpened and honed frequently.
I've owned grafting knifes in the past. Have used only carpenter knives for
the past 20 years for soft wood as well as hard wood such as Carya. When
the blade gets dull simply replace it. Some of the old time grafters (maybe
some today) would take the honing stones in the field with them to keep the
blades sharp. Simply reverse then replace the blade.

Don't lose time and waste money on a grafting knife. Successful grafting is
all about your skill, timing and graft method, not the knife. Yes, the four
flap is a good hardwood method.

Thanks for all the info. Being in central Virginia, I'll be starting tapping
tomorrow.
Flow is early and quite inconsistent this far south, though perhaps all
tappers deal
with inconsistency.

Black walnut trees produce a decent-tasting syrup, though they are sparer and
even
more inconsistent with sap production. I also tap a wild maple (silver?),
and cannot
tell any taste difference from my sugar maple; both syrups are wonderful.

Kiwi vines produce a torrent of sap, like grape vines, but I never got as far
as tasting
the syrup. The boiling sap in a closed house made me feel sick for hours.
