Maria,
I live nearby in Lamoille County and we have an amazing amount of wild
chokecherries this year. I like them raw when they are ripe and there
are no blackberries nearby, but there are so many chokecherries this
year I was looking up recipes myself. I plugged Samuel Thayer's
Forager's Harvest here before, but I will do so again, because it
contains an excellent chapter on chokecherries. He recommends using
them for fruit leather, syrup, and jam if I remember correctly. I'm
hoping to use the syrup recipe this weekend.
Here's a link to the book. It also has good info on using other native
fruits and nuts (butternuts, juneberries, sumac, highbush cranberry,
etc).
