My favorite is buttercup. Last year, my buttercup did much better than my
butternut, and they stored fine until March. They were starchy like a potato
when I first picked them, but very sweet after storage. And they were
completely smooth and dense, and free of stringiness. I didn't bother to bake
them into pies, since they were a dessert as-is.

But I'm not really qualified to advise you from down here in zone 5. I'm not
trying to get rid of you, but I wonder if someplace like the Far North Forum
would give you better responses:
