Melissa,
John H. Gordon, Jr., at Amherst NY has been fruiting
a number of D.virginiana cultivars at his place for
years - I got my first two named-varieties from him
as scionwood - one of them, NC-10, is a selection
made by Doug Campbell in Ontario - drops big, ripe
fruit in early to mid September both here in southern
KY as well as at JHG's place in NY.
I don't have the URL for John's website handy, but
some other NAFEXers may be able to supply it - He'd
be a good 'local' source for information, as well as
grafted varieties for you to consider.
I'll defer to Jerry on Rosseyanka's suitability for
your zone 5 - it's rather late-maturing here, and
will hang (and freeze) on the trees, well into
December - provided the critters don't eat them. I
pull them off, individually, as they ripen/soften,
and either freeze them to eat like a popsicle, or
slice them and dry in the dehydrator.

I probably just need someone to talk me out of this,
but y'all got me thinking about persimmons again. Is
it possible to grow them in zone 5a, upstate NY? I
know the American species is hardy to this zone, but
do the fruit have enough heat and time to mature
here? How about this Rosseyanka hybrid?
I saw a kaki tree in Switzerland in December that
looked ridiculous, it had so many gaudy orange fruit
on it. It made me think that a persimmon might be
worth planting just as an ornamental.
