Hello Walter,

They say a picture is worth a thousand words so I'll try to reduce my usual lengthy reply. Ha ha.

When the bark is in the slip, it means the bark slips away from the vascular section easily. Then wood is growing, all growth takes place at the cambium. Cambium (the green layer just under the bark) cells grow in all directions, outer cells become bark and inner cells become cells that carry nutrients between the leaves and roots, the vascular system. When the cambium is developing new cells (growing) it becomes "juicy" (my non technical term, not a botanical term) allowing the bark to be pulled away easily and cleanly. During this growth period the bark is in the slip.

To illustrate, this picture was just taken where I made a horizontal cut on a piece of dormant persimmon scion wood then tried to pull off the bark
  

As can be seen the bark tore and some cambium came off with the bark in chunks.

In the next picture I cut off the top of a potted persimmon actively growing in my greenhouse with about 6 inches of new growth on the limbs.


As can be seen, after making the cut through the bark, the bark and cambium slipped off the vascular section cleanly.

This understock is, "in the slip." I will graft this tree later today.
