There is a book called 'Identifying and Harvesting Edible and Medicinal
Plants' by Steve Brill & Evelyn Dean. In it is a recipe for boiled
poke greens, and a caveat that you should not try this out without
the supervision of someone more experienced. You boil young
greens in three changes of water before eating.
Another reference: Sloan-Kettering hospital has a website about herbs,
botanicals, etc. which lists the active ingredients, uses, references, etc.
for individual herbs.
