This is not really a suggestion for apples but a strategy for finding them.
(I am going through a similar process looking for flavors that suit me for
mid to late blooming apples that can mature in a cool climate and aren't too
late maturing.) Your list of flavors you like seems to have a wide range
from sweet to sweet tart with a priority on crispness. Try as many kinds of
apples you can find. Sometimes farmers markets or roadside stands have more
unusual ones that have been grown in your area. You may find some good kinds
that do well and discover new likes.

Look around for areas of the country that have similar temperature ranges.
Usually you can find some sort of a website for the state that will list
things like annual growing degree days or average highs and lows for each
month. Try and match up your temps with other areas, then check both
University recommendations as well as fruit folks in the area. Often
descriptions of apples will mention if they don't tolerate heat or if they
require a long hot season to do well. You might start with the Best apples
to buy and grow published by the Brookland Botanic Garden but written mostly
by NAFEX folks also look at the description in the Fruit and Nut Inventory by
the Seed Savers exchange (Note that these descriptions are based on catalogs
which sometimes leave out the down sides of particular varieties) You could
also look at Cornucopia II at the apples listings and Tom Burford book on
apple varieties. There is a book by lee Calhoun on old Southern apple
varieties that NAFEX members can check check out from the NAFEX LIbrary Many
of those should be more heat tolerant.
