Thanks for the links.
My Chestnut crabs grow to 2-2.5".
I would never consider Dolgo a crab which could be eaten fresh.
When one reads these evaluations from Ohio, they really apply to Ohio
not to the rainy PNW.
For the wet PNW, Mt Vernon Research Stn has evaluated some ornamental crabs.

crabapple evaluation orchards. The fruit was walnut or golf-ball
sized, great flavor, and the tree appeared to have some disease
