Just found that there is an online version of the classic 12 volume work on Burbank, Luther Burbank: his methods and discoveries and their practical application at

Many thanks to the U. of Wisconsin for making the set available. It might contain a picture or other reference to the Oxheart cherry.
There was also a list of all of Burbank's creations put out by U.C. Berkely many years ago, but I haven't been able to find that online.

Luther Burbank bred sweet cherries and I'm pretty sure one of them was named Oxheart. Since Burbank was in Santa Rosa, California it's easily possible your mother could have encountered his varieties in Woodland, California since they aren't that far apart.
