You can buy frozen concentrated white grape juice with the other juice
concentrates at your grocer. Use a universal pectin - like Pomona's - that
doesn't require sugar to set up. Look for preserve recipes using honey and
substitute the grape concentrate for that. Rodale Press's book "Stocking Up
III" is out of print but available online through Amazon et al. The jam and
jelly recipes within are honey-sweetened.

Try a small batch first and test the sweetness. I've used apple juice
concentrate, as well, for preserves, when I was investigating home-grown
sweeteners. Don't know why I didn't try grape, then - I had more grapes
than apples available.

Hey,

This brought up a question I've had for some time, but keep forgetting
to ask.

I've noticed the at the grocery store that they are now selling jams,
jellies and spreads that do not contain sugar, but are using white
grape juice concentrates instead. So how is this done? I would love to
know since it's costing me an arm and a leg to buy the stuff and I'd
like to make my own flavors.
