The simple answer is instinct. Fear off the different Every thinking, living thing has had that particular instinct breed into them for millions of years.
For millenia avoiding the new, strange and unusual presered life.
Running away from the new, strange or unusual was the standard.
We now have reason, but reason is not hard wired like instinct.
You need a few shills infront of your booth raving about tomatoes. Once the innovators have acccepted the fruit, the more tentative masses will folow.
