Here in North Central Minnesota, wild rose bushes rarely grow to more
than 36" tall. Those growing under the eaves of my shop, though, are 8' to
10' tall. Besides all the rainwater off the roof, they also get a yearly
dose of fertilizer.
Here at Brambleberry Farm, Wild Rose Hip Syrup is a best seller, second
only to maple syrup (we also make syrup from Red Sumac berries and another
from Elderberries).
We can't get enough Minnesota wild hips and so get many from Montana and
Idaho. Most of our hips are picked after freezing. We dry and store them
until needed. We make jelly out of some, and while they act as though they
still contain pectin enough to gel, we add citrus pectin to ensure recipe
accuracy.
