Hi,

Preference in smoking fuel is akin to preference in apples.

People smoke meats/fish with things ranging from corn cobs, to peat, to sheep chips, to wood, to mangrove roots.

Each will claim their fuel is best. It all depends on regional and personal subjective tastes.

I just did some summer pruning on apples, and the larger suckers will be used green to smoke some summer sausage.

Some sear by green wood, some swear by dried. The only thing that matters is your preference. Smoking meats and the fuel you like best, is an area to explore, just like fruit.
