Liven up curries? Those folks must have better taste buds that me
(we/us), or else they make pretty mild curries. I cannot imagine the
taste of an apple surviving curries the way I like them (hot). Perhaps
the Brits just have a better imagination than those who live West of
them.
I have some Indian food on the stove right now, and I can attest that a critical component of many dishes is sour and sweet flavors, both of which you can get from apples. My husband once made a chickpea dish that calls for a tablespoon of tomato paste, and forgot the tomato. Despite all the other spices, the lack of the tomato was quite apparent. The dish just tasted a little dull - it needed to be livened up.
