The Spring 2002 POMONA has a half-page article(p.43) from Henry Hartmann on drying American persimmons - he was tearing the fruits open, removing seeds, and placing on stainless steel cooking trays inside a closed car (seems like I remember Donna writing about drying fruits in this manner previously) parked in the sun. Took 3 days to dry them, then they were stored in ziploc bags.
Mr. Hartmann tried this with several American persimmon varieties, but found that "Elmo"(Claypool H-118) worked best for him.
