It depends where you live. I gather that in the Pacific NW bloom time is very spread out, and it is important to match the timing of potential pollenizers. Around here in the Atlantic NE all the apples bloom at about the same time. Lots of wild crabs, domestic crabs, and domestic apples all seem to be in bloom pretty much simultaneously every year. I suppose you could have trouble if you had only two trees, and one was very early and the other was very late, but two random trees would probably do fine.

Hilltop Orchard used to publish a very detailed list of bloom time for their stock, although I'm not sure what region they published it for, if you are looking for more info.

Hello,

So even if you purchase an early apple, and an early crab, they would only be a match if the
"early" classification was from similar zoned growers?

Lucky, you've made an outstanding comment re: bloom times.

In southern regions (6 and south) required chill occurs very
early (likely by late January most years) and trees respond to
other factors (such as soil and air temps, for example) as to
when to break dormancy.
Therefore, it is most difficult to say with certainty when
stuff blooms. At our former location (near heaven) all crabs
bloomed very early as does Granny Smith apple.

Hope this helps.

Does anyone know what varieties of Crab bloom at particular times, to

blooms? (early, mid, late)

Tom,
This info is going to vary, depending on whose pollination chart you go by,
and to some degree, where they're located. Bloom periods in the PNW may
not correlate exactly with what you'll experience.
Others on the list may have more reliable info, but here's what I've
gleaned from the few catalogs I've got with pollination charts:

From my old Bear Creek catalog:
Early:Chestnut, Dolgo, Manchurian Crab, Wickson
Mid: Almata(red-flesh), Winter Red Flesh
Late: Snowdrift Crab,Whitney

From Raintree:
Early: WSU AxP crab
Mid: Dolgo, Almata, Centennial, Red Flesh

One Green World claims all their apples/crabs, with the exception of Fuji,
to be mid-season bloomers - that would lump all the following crabs in the
mid-bloom period: Callaway, Dolgo, Kerr(I really like the fruit from this
one, but it's not been a heavy bearer in my orchard),

Yates, which is technically not a crab, but has a small, late-maturing,
long-keeping tasty apple, falls into the early season
