The traditional use for food is to peel and crush the acorns, leach them in water (usually by boiling until the water stays clear) then dry the meal and grind it fine enough to use as flour.

Ginda,
Here in North Carolina we also have a bumper crop of White Oak acorns.  By
late October the turkeys move in and devour the White Oak acorns in a week
or so, but they won't eat our Red Oak acorns.
I have tried crushing acorns for the birds, but they much prefer crushed
Hickory nuts.
