The last time I had enough sweet potatoes to sell them wholesale seems to have been 2007. I was getting 1.20 / lb wholesale for them then; yes, to a buyer who wanted local organic, though I think Albert's may have been even higher (for organic non-local).

Terminal market pricing is a starting point. Generally restaurants pay some non trivial markup from that depending on how many levels of distribution are between them and the terminal. And of course their price is also moderated by the volume of business they do with the distributor. At least that has been our experience. Some wholesale buyers will pay a premium for local, organic. YMMV.
