Terminal market pricing is a starting point. Generally restaurants pay some non trivial markup from that depending on how many levels of distribution are between them and the terminal. And of course their price is also moderated by the volume of business they do with the distributor. At least that has been our experience. Some wholesale buyers will pay a premium for local, organic.
