I think you are dramatizing a bit here. This winter, I am buying my
storage vegetables from a local small-scale (2 acres), diversified
organic grower. The guy has fairly rudimentary storage system, and yet,
all the veggies I am buying from him are top-shape. Of course, he has a
few years of experience growing, storing and marketing storage
vegetables in the winter, but still.

I am not saying that there is no room for specialized growers. I am
just saying that storage vegetables can be done successfully at a local
scale by diversified growers. I guess it's a matter of experience and
know-how, like everything.
