Did he save the seeds from a squash he bought at market? It may have been grown in a field with multiple squash varieties, in which case the seed is going to be a cross and the fruit is likely to be variable. Or it may have been a hybrid, in which case what you have now is the F2 generation and the fruit is again likely to be variable, and may be even more so in the next generation. I'd check for flavor and, if they taste good, save a number of them and take seed for next year from the best keepers; see whether you can develop your own variety. That, of course, is if you're feeling experimental. If you're not, I'd just buy New England Blue Hubbard seed next year. They're extremely good keepers -- but then, I think hubbards in general are extremely good keepers. If any of them are bitter -- don't eat them (at least not the bitter ones). Or sell them.
