I weigh what we pick. Each of our customers (restaurants) get an invoice that lists weights. At the end of each month I simply tally up the invoices enter the data. I can tell you how many total tons at the end of the year a specific customers has purchased or how many ounces of a single herb ALL my customers have purchased. Weight is the easiest thing. It translates to row foot, or per tree, or per bed quite well. I use Excel and keep everything as simple as possible.
