I wash all my greens and it does make a big difference. 

If I pick before the heat of the day (dawn to around 8am) and wash the greens they will store in the fridge for 4 weeks before they start to rot. If I do not wash the greens they will store about 10 days before they start to rot. All greens are refrigerated, bagged and picked early morning.

I label all greens "Please Wash" as the washing I do is to cool and hydrate as well as getting the slugs and spiders off the greens.

I also remember reading in the magazine "The Vegetable Grower" pretty much the same thing as I have found over and over-hydrocooling is good for cut greens-it keeps the quality up longer because it inhibits rotting which starts as soon as they are cut but is dramatically slowed by cooling and cold storage.

the chef you read is wrong about this, but I find chefs are often wrong about the handling of whole fresh foods.
